How to make turkey soup. Here's a great recipe for the last of the leftover turkey. This recipe also uses the turkey carcass, adding extra flavor that you can't find in a can. Ingredients 1 onion, chopped 2 carrots, 1 chopped and 1 finely diced 1 celery stalk, chopped 1 tbsp of extra virgin olive oil 1/2 cup of dry white wine 1 turkey carcass 4 cups of chicken stock 4 cups of water 1 bay leaf couple of peppercorns 2 sprigs of parsley 1/2 tbsp of thyme salt and pepper, to taste Instructions 1. Pull apart any leftover turkey meat with your hands, really working the bones to find the remaining secret sweet meat. 2. Cook the onion, carrot and celery in extra virgin olive oil over moderately high heat, stirring for 7-10 minutes or until vegetables are golden. 4. Add the white wine and bring to a simmer. 5. Add the turkey carcass, chicken stock, water, bay leaf and peppercorns. 6. Make a bouquet garni by tying fresh parsley and thyme in a little bundle so that you can remove it easily later on. 7. Bring everything to a boil. 8. Then lower to a simmer and cook for about and hour. 9. Remove large pieces of the carcass and strain the soup back into a skillet. 10. Heat over medium heat. 11. Add the turkey and diced carrots and season with salt and pepper. 12. Simmer the soup and skim any froth or fat as it rises to the surface.   1. @brantze, I totally have to go with your method. Totally crazy where they used the skillet to move all the vegetables. I didn’t even see them add the stewed vegetables back in other than a measly chopped carrot. It looks like stained water. Happy christmas. I wont be cutting down on the fat either, fat + seasoning = flavour.

  5. Use turkey stock – no wine – carrot? it’s supposed to be a white soup. Never fat in a soup -

  6. What I do with left over turkey is boil the bones for broth. Put large pieces of turkey in broth and then divide into containers broth and turkey for freezing. That way when I want some turkey I can take it out of freezer and make hot turkey sandwiches, stew or soup. Turkey Stew and dumplings the best.

My recipe is much simpler i boil the bones down for awhile then i add all of my veggies turkey etc…and simmer this doesnt look very hearty at all mine is full of veggies carrotts celery etc,,,,I leave the parsley out. You can down on the fat by boiling the bones down once cooled or even frozen remove what fat you want but dont remove all !! Otherwise there won’t be much taste. Use your imagination for ingredients i even use barley and even if im in the mood a little bit of noodles.
